California Pizza Kitchen is an American chain of restaurants that was founded in Beverly Hills, California in 1985 by two attorneys Larry Flax and Rick Rosenfield.
They are well-known for their original and unique pizzas such as BLT, Original BBQ Chicken Pizza, Jamaican Jerk Chicken pizza as well as Thai Chicken pizza.
In addition to their less regular pizza flavors, California Pizza Kitchen also provides a variety of soups, sandwiches desserts, and salads.
There is also a broad selection of menus for children 10 and under, which includes chicken, pasta, salads, and, obviously pasta.
California Pizza Kitchen has about 200 locations across 33 states as well as 13 other countries.
They also have seventeen California Pizza Kitchen non-traditional branches and franchise concepts specifically designed for stadiums, airports, and universities.
The brand also has an exclusive license for a line of gluten-free, crispy, and hand-tossed frozen pizzas that are sold in supermarkets. But how did the giant casual dining pizza chain start?
History of California Pizza Kitchen
In 1985, lawyers Larry Flax and Rick Rosenfield created California Pizza Kitchen by collecting 200k in cash and loan from banks with 350,000 dollars from friends leasing space along Beverly Drive in Beverly Hills, California.
Their idea for California Pizza Kitchen was simple since Flax and Rosenfield desired to open an elegant, casual, family-friendly restaurant with excellent food.
The majority of CPK’s kitchens are open so that customers can watch how the cooks make their pizzas.
The pizzas are baked in wood-burning ovens imported from Italy and bake the pizza at 800°F for three minutes to allow the ingredients to cook into their pizza dough.
The result of their cooking method is better tasting as well as healthier and more delicious pizza.
Their very first menu, featuring the well-known BBQ Chicken Pizza was developed in the hands of Ed LaDou a pizza chef at Wolfgang’s Puck Spago restaurant.
Flax and Rosenfield were then able to add soft drinks pasta, salads, dessert, and liquor to their menu.
Then, California Pizza Kitchen was a huge success and, the next thing they knew was that CPK expanded across Southern California. Seven years following its debut, CPK had about 26 branches.
